Note to vegetarians. It’s even better with an egg.
Ingredients

1 onion

2 carrots
-
2 celery stalks - each chopped individually in a processor then added to bowl.

2oz mushrooms - chopped

8oz walnuts - chopped

2oz lentils (cooked)

3oz fresh wholemeal breadcrumbs

4oz mashed potato

1 large can of tinned chopped tomatoes (drained)

1 teaspoon vegetable stock powder or stock cube

1 tablespoon peanut butter

1 heaped teaspoon of mild curry powder

1 teaspoon of mixed dried herbs

1 heaped teaspoon basil

1 teaspoon of minced garlic

lots of freshly ground black pepper
Method

When all ingredients are amalgamated press into a loaf tin
and bake in oven @220c for approx. 30-45mins.

Keep checking. (If fan oven, reduce temperature by 10 degrees C)

Decorate with red onion rings and fresh parsley.
